White Cheddar Mac & Cheese makes us Happy! But why, you ask?  Because cheese actually contains an amino acid, Tyrosine, which induces contentment. Why is that? Because Tyrosine is critical for our bodies to produce Dopamine, our “Happy” hormone.

Plus, it tastes so delightfully yummy! Of course, it also complements so many dishes. For instance, it’s great with a Turkey Club Sandwich or even Steak!  But It is undoubtedly possible to eat an entire bowl of White Cheddar Mac & Cheese all by itself…… #MacNCheese

If you need an excuse to consume the carbs & calories in this dish, then think of your bones! Cheese contains calcium to strengthen & protect your bones, not to mention the protein, riboflavin & phosphorus! So, give yourself a Treat & try our White Cheddar Mac & Cheese!

Origins of Cheddar

Did you know that the Original Cheese is known by the name “Cheddar” actually comes from Cheddar in Somerset, UK? You can actually visit the town today & tour the natural caves where they once kept the Cheddar Cheese as it matured! What a Fun Cheesy Vacation that would be!

We’ve tried different Cheddars in this recipe. From Mild to Sharp, they are all Delicious! Did you know that the more “mature” or aged a cheese is, the sharper in taste it will be?

So, let’s make White Cheddar Mac & Cheese:

  • 16 oz. uncooked Pasta
  • 4 TBS Butter
  • 1 Cup Heavy Cream
  • 10 Oz White Cheddar
  • ½ Teas Pepper
  • 1 Teas. Salt
  • 1 TBS Dried Minced Onions
  • 1 Cup Sour Cream

You can choose whichever type of pasta you desire. We love the shells because they hold all that creamy goodness so well. Omit the onions if they are not to your taste. You can shred or cut your cheddar cheese into small cubes. It’s going to melt one way or the other….

White Cheddar Mac & Cheese

Boil the pasta to ‘al dente’ (still slightly firm) then drain. Melt the butter. Then add the heavy cream on low to medium heat & add your white cheddar. Continuously Whisk. We don’t want to scorch our sauce & ruin this masterpiece! Once the cheese has melted, add in the onion, salt, pepper & sour cream. Stir until creamed together. Add your choice of pasta & ENJOY!

We also love to “top” our White Cheddar Mac & Cheese. Fresh Oregano is pretty & also adds just a bit of a “bite”. Pico de Gallo is a great topper too! Of course, we must have our homemade Pico de Gallo. Bacon bits are another family favorite when it comes to a topping.

Choosing your Pasta:

Carbs get a bad rep! But pasta can actually provide our bodies energy. That is one of the reasons you always want to cook your pasta, Al Dente. This keeps the glycemic index lower & our bodies can digest it slower. Carbs can provide fuel for active muscles. So, eat your carbs then take an energetic walk!  #MacNCheese

Pasta comes in so many forms now too! Whole grain is lower in calories but higher in fiber & nutrients. Then there is also the pasta made from beans, lentils, or even chickpeas. So, you get your fiber along with protein. We shouldn’t forget to include the veggie pasta either! But whatever pasta you choose, this White Cheddar Mac & Cheese sauce is sure to become a favorite for you too!

We really enjoyed our Antoniou Cabernet Sauvignon (from our very own Club) with our White Cheddar Mac & Cheese along with our medium-rare Ribeye. The high levels of tannin & the hint of pepper are perfection in a glass, especially with this pairing.
