Beef Bourguignon in a Slow Cooker

Our Beef Bourguignon is created in a Slow Cooker. This method delivers the tenderness & intense full-body flavors we crave. Of course, our Ricord Merlot makes this dish extremely flavorful. This mid-palate weighted wine allows the full flavor to be experienced while the hint of herbs teases your senses. The notes of toasted almond, hazelnut & tobacco fully complement our Beef Bourguignon recipe.

Different cuts & types of beef will make a difference in your dish. But it is the low-temperature slow cooking that makes all the difference. It is due to this method that collagen breaks down & makes the meat fall apart. With the addition of beef stock, the collagen becomes a rich Flavorful gelatin-like liquid!

The science behind why meat falls apart when slow-cooked is simple. Collagen melts when slowly heated for a lengthy period.

We also sear our meat before adding it to the slow cooker. While there are those that dispute this effect, we feel searing adds a caramelized texture to the meat & a rich flavor to any soup or stew. It also adds a darker appealing color.

Like many others, our life is very fast-paced. But this recipe allows us to throw it all together in the morning then come back to a relaxing evening meal. Of course, we usually have a couple glasses of our Free Ricord Merlot with this dish!

Start with The Beef

A Chuck Roast has a reputation as tough meat. But when it is slow-cooked, the connective tissue melts. It also “self-bastes” making the meat oh so tender! Therefore, you don’t want to trim too much fat from your Chuck Roast.

Ingredients for your Beef Bourguignon in your Slow Cooker:

1-2 Tbs Olive Oil

2-4 Oz. Bacon

2 Pounds Chuck Roast (Cubed, patted dry & seasoned with Salt & Pepper)

5 Oz. Carrots (Sliced, Diced, Matchsticks)

1 Small Onion (White or Yellow) diced

3 Cloves or Teas. Minced Garlic

1 Teas each Salt & Pepper

1 Tbs Flour OR (for Keto-friendly use ½ Teas. Xanthan Gum

2 Cups Ricord Merlot

2 Cups Beef Stock

1 Tbs Tomato Paste

1 Tbs. Better Than Beef Bouillon or 1 Bouillon Cube

1 Teas. Thyme

2 Bay Leaves (remove before serving)

* Optional 4 – 6 oz. Pearl Onions

* Optional ½ Pound Mushrooms (Sliced, whole, quartered)

Beef Bourguignon Slow Cooker

Sauté the bacon with olive oil in a large skillet. For bacon lovers, we suggest using a full 4 oz. of bacon. We usually compromise and use about 3 oz. When the bacon is brown & crispy, crumble and transfer to the slow cooker.

Transfer the cubed Chuck Roast to the heated skillet & sear the beef. Once the beef is seared on all sides, transfer to the slow cooker. Then if you wish, add a little olive oil if needed and sauté the diced onions. When the onions start to become translucent, add the carrots, then finally add the garlic for no more than 5 minutes. (Of course, you don’t need to sauté the vegetables. You can just add them to the slow cooker. It is your preference.)

 Deglaze your skillet with some of the stock. Transfer the liquid to the slow cooker. Then add the remaining stock to the slow cooker. If you are using Flour, pour some of the wine into the skillet & whisk in the flour until there are no lumps. If you use Xanthan Gum, you can add it directly to your slow cooker. Add all other ingredients to the slow cooker. Allow for around 6 hours on low. You can tell if it is ready for consumption because the meat should be falling apart & super tender. **Pearl Onions can be added to your slow cooker at any time if you desire. We suggest not adding the mushrooms until right before serving. Because the longer they stew, they tend to break apart & are no longer distinguishable as mushrooms.

Our favorite way to serve this meal is on top of Mashed Potatoes! There are those that prefer wide egg noodles as the bed for this delicious concoction. Still, there are even other choices! Roasted potatoes, rice, polenta, or even Riced Cauliflower for those that wish to stick with a Keto Diet. Of course, you can go completely traditional & serve your Beef bourguignon on a slice of garlic toast!
