We like to start with really thin sliced chicken breast. But before that, we really love, at least, a Quick Brine for Chicken Breasts. Not only is the Taste Better, but the meat is also tenderized naturally. Our Quick Brine consists of 4 Cups of Warm Water & 3 Tbs of Sea Salt. Once the Sea Salt is dissolved in the water, we add our Chicken Breast. They must be completely covered with the water mixture. There are even times we add in some Herbs. For this recipe, Fresh Rosemary stems add a great boost of flavor to the brine. Then just let them sit a minimum of 15 minutes – but up to 30 minutes is even better…

When the 15-30 minutes is up, we Rinse & Pat Dry the Chicken Breast. Then We’re Ready to Start Cookin’ #ChickenPasta

To Feed a (our) Family of 6 You’ll Need:

Tuscan Garlic Chicken Pasta
  • 3 Pounds Thinly Sliced Chicken Breast
  • 4 Tbs. Extra Virgin Olive Oil
  • 2 Tbs. Minced Garlic
  • 2 Cups Heavy Whipping Cream
  • 1/2 Cup Chicken Stock
  • 1/2 Cup White Wine
  • OR OMIT the Chicken Stock & use 1 Cup White Wine
  • OR OMIT the White Wine & use 1 Cup Chicken Stock
  • 1 Tbs. Italian Seasoning
  • 1 Cup Grated Parmesan Cheese
  • 3/4 Cup Fresh Chopped Spinach Leaves
  • 1 Cup Sun-Dried Tomatoes (chopped if you desire)
  • Whichever type of Pasta or Side you LOVE

When making this dish, our preference is All White Wine, omitting the chicken stock. Our Tanya Pinot Grigio makes this dish come Alive with Flavor, both in the Sauce & in My Glass! This may be an Olive Garden Tuscan Chicken knock-off but our Family agrees it’s even better at Home!

Prepare Tuscan Garlic Chicken Pasta:

Heat the Olive Oil in a Jumbo Skillet. Brown the chicken on each side for about 5 minutes each, until it is golden brown. Set the chicken aside. Add the Minced Garlic & sauté for 20-30 seconds. Then add in the White Wine & Chicken Stock (if you are using it). Bring to a slow boil then lower the heat. Add in the Heavy Whipping Cream continuously whisking. Add in your Herbs & Parmesan. Continue to Whisk. Then add in the Sundried Tomatoes. #DinnerIdeas

Let it simmer as the sauce thickens, stirring often. Lastly, add in the spinach leaves. Once the leaves begin to wilt, the sauce is done. You can add the chicken back into the pan. Typically, we add the chicken & sauce into a large serving dish along with our pasta. But if you wish to keep them separated, go for it! After all, this is YOUR Pasta Dish! This isn’t bad over Zucchini noodles either!
