When you taste this Cranberry Speckled Treat from Heaven, you’ll go back for Seconds! Probably even 3rds & 4ths!  You might not like cranberries. But when you taste this confection, you’ll change your mind!

Cream cheese definitely puts this cookie over the top! It’s no wonder! Cheese makes everything better, right? Did you know Cheesecake has been around since the first century? Marcus Porcius Cato (234-149 B.C.) actually documented his recipe for ‘Libum’ – which seems to be the first recorded recipe for what we know today as “cheesecake”.  #Cranberries

Then, let’s add in the pleasing tartness of Cranberries!  The tongue is teased perfectly between the tart & sweetness!

Did you know that cranberries contain polyphenols? This is a plant nutrient that is beneficial for our heart, urinary tract health & works to prevent cancer. So, we can never have enough cranberries, right?

But there is a certain someone in my family that Hates Cranberries! Yucky yuck yuck!! Then he tried these White Chocolate Cranberry Cheesecake Cookies. Errrrrr – should Never have let him try them! Because NOW I’m expected to Share!

Now, when you make this cookie, be prepared! The Dough is Super Sticky! You might think you’ve done something wrong. Nope! It really sticks to your hands and the spoon…

So, Whip These Dry Ingredients together:

White Chocolate Cranberry Cheesecake
  • ¾ Teas. Baking Powder
  • ¾ Teas. Baking Soda
  • ¾ Teas. Salt
  • 2 1/4 Cup Flour

Then Cream These Ingredients Together:

  • ¾ Cup Sugar
  • 1 Cup Brown Sugar
  • 8 Oz. Softened Cream Cheese
  • ½ Cup Softened Butter
  • 2 Eggs
  • 1 Tbs. Vanilla

Then, Finally, Combine All the Ingredients & Fold in the Following:

  • 2 Cups White Chocolate Chips
  • 2 Cups Dried Cranberries

Now your oven should be preheated at 350° so we can Bake these Spectacular Speckled White Chocolate Cranberry Cheesecake Cookies! They only need to bake for about 12-14 minutes. We use a Tablespoon because we like larger cookies! #CookieTime

When the buzzer goes off, you may feel that they don’t look DONE… Don’t fret! They are Light & Delicious!   

Some people think these are Raisins when they look upon these cookies! Your kids or even grownups may not want to try them. Because they don’t like Raisins? Or, maybe it’s because they think they won’t like them due to the Cranberries! You know what? More for Us!

You might Be Glad they didn’t try them!!

Because the very first batch I made, Disappeared! There weren’t Any Left for the next day!

So, I doubled the next batch & Froze some dough Just for ME! Although the dough is really sticky, I still made it work! Thank you to whoever invented Wax Paper!
