Both Pumpkin Spice & Chocolate Chips in One Muffin has got to be the Best Combination Ever! This is especially true when September starts to fade & October brings thoughts of Pumpkins, not to mention those little ghosts & goblins…..
My little ghosts, goblins, witches & monsters adore my Homemade Chocolate Chip Pumpkin Muffins. They are So Moist; they melt in your mouth! Of course, we tweak our Pumpkin Spice so it satisfies our taste buds. Because store-bought Pumpkin Spice just doesn’t appease the palate…… #PumpkinMuffins
Do you know how to make Pumpkin Spice?
Traditional Pumpkin Spice is made up of Cinnamon, Ginger, Nutmeg & also Cloves:
- 2 Teas. Cinnamon
- 1 Teas. Ground Ginger
- 1/2 Teas. Ground Nutmeg
- 1/2 Teas. Ground Cloves
This will give you exactly 4 Teaspoons, which is exactly what you need for this Pumpkin Spice & Chocolate Chips Muffin Recipe. But using 4 Teaspoons of this mixture will give you a mild Pumpkin Spice Flavor. So, if you are a Real Lover of Pumpkin Spice, we suggest doubling the amount of spice…..
Also, when you make your own Pumpkin Spice, you can mix it to your taste preference. We have a fondest for Cinnamon in my family, so we usually double the Cinnamon.
This recipe will make approximately 24 average size muffins.
Bake at 375 Degrees for @ 18-21 Min.
Whisk these ingredients & set aside:
- 3 Cups Flour
- 4 (or more) Teas. Pumpkin Spice
- 2 Teas. Baking Powder
- 1 Teas. Baking Soda
- ½ Teas. Sea Salt
Then in a Separate Bowl, mix these ingredients:
- 1 Can Pumpkin Puree (15 oz)
- 1 Cup Coconut Oil (can substitute vegetable oil if desired)
- 2 Teas. Vanilla
- 4 Eggs
- 1 Cup Brown Sugar
- 1 Cup Sugar
Now you can add the flour mixture to the pumpkin mixture. Thoroughly mix until the batter is smooth. Because you don’t want any lumps in your batter.
Fold in:
*** 1 Cup of Miniature Chocolate Chips
Of course, you are not required to use Miniature Chocolate chips. The regular size will do as well. But there’s just something about those cute teeny-tiny chocolate chips!
So, now, you are ready to fill your muffin cups! We prefer muffin/cupcake baking cups! They are so much easier on Clean Up, not to mention fun for the kids!
You should fill your muffin cups about 75% full
Bake for about 18 – 21 minutes. The muffins should “bounce” when they are ready. You can also use a toothpick to test for completion, but if the toothpick comes into contact with that melted chocolate……. That is why we typically use the “bounce” method…. #PumpkinMuffins
