Cookie Monster Cookies make all our little Monsters squeal with Joy! It’s so much easier to eat those Vegetables when you know those Cookie Monster Cookies are waiting for you! All of a sudden that Broccoli isn’t so bad!
And just when you think all those Grown-ups have outgrown their inner Cookie Monster…. Here come the Grown-Up Cookie Monster Cookie Lovers!
So, Blend together these Dry Ingredients & Set aside:
- ¾ Cup Flour
- 1 Teas. Baking Soda
- 1 Teas. Corn Starch
- ¼ Tas Baking Powder
- ¼ Teas Salt
Whip these ingredients until they are super fluffy:
(A mixer on high speed takes 2-3 minutes)
- ½ Cup Softened Butter
- 1 Cup Packed Light Brown Sugar
- ½ Cup Peanut Butter (We prefer creamy but chunky is ok too)
Then add & gently whip in these ingredients:
- 1 Egg
- 2 Teas. Vanilla
Now steadily (on low speed) add the dry ingredients that you set aside to your mixing bowl
Finally, gently stir in (on low speed) the remaining ingredients:
- 1 & ½ Cups Oats
- 1 Cup Mini Chocolate Chips
- ½ Cup Mini Peanut Butter Chips
- ½ Cup Mini White Chocolate Chips 1 Cup Mini Chocolate Chips
Baking Time
350 Degrees for 8 – 10 minutes.
We tend to spoon drop about 2 Tbs per cookie. There is no need to shape or roll them. But we find Parchment Paper is SO MUCH better to use compared to straight on a cookie sheet. These cookies are moister & stickier than your traditional Chocolate Chip cookie! Also, they will not necessarily “look done”. The edges will start to crisp & brown – that means they’re Done! #CookieMonster
You Definitely want them to remain On the Cookie Sheet to Cool. They break apart very easily. But you will find they disappear before you know it!
Inside the Cookie Monster Cookies
If you have little monsters that don’t like nuts, we suggest using Creamy Peanut Butter. You can also use Just Mini M&M’s or Just Mini Chocolate Chips and leave out the Peanut Butter or White Chocolate Chips. And you don’t have to use Mini Chips – Regular size taste marvelous also!
This dough is absolutely perfect for freezing! Again, that Parchment Paper is a Life Saver. We just make sure the dough balls are not touching & separate each layer with parchment paper. Then take out the desired amount whenever they are needed. They can easily “defrost” as the oven warms up. Then just bake as normal. #KidsFun
