This Ashleigh Moscato Strawberry Cake wouldn’t be the same as any other Moscato. As we haven’t tried every Moscato out there, we could be biased. But we truly believe this one is the Best! The notes of green apple & vanilla bring a sweetness that boosts the wonderful strawberry flavors of this cake. If you appreciate a German Riesling, this would be a perfect fit for you. Ok, there may be other reasons why we consider it the BEST… It could be simply because our bottle was Free! But truly, this is Fine Wine & not available at your local store.
You are more than likely & fully aware that you can make a cake from scratch. But there is also layering the cake, making the frosting & decorating. And so many of us do not have the time for a culinary masterpiece.
So, let us make this as easy for you as possible…….
Buy a Strawberry Cake mix BUT Do NOT follow the directions on the box!
What you’ll need:
1 Box (15.25 oz.) Strawberry cake mix
1 Cup Ashleigh Moscato
½ Cup Coconut Oil (Liquid NOT solid)
3 Eggs
Ashleigh Moscato Strawberry Cake
Dump the cake mix into a large enough bowl & make sure any lumps are “de-lumped”. Add in the Moscato, oil & eggs. Whisk or beat until the batter is smooth.
You can bake this cake in any kind of pan you desire. This is the only place you should follow the directions on the box. Bake your cake per the time specified on the box (due to your choice of pans).
We choose a Bundt pan.
We also choose to add 1 & ½ Cups of Diced Fresh Strawberries to our batter. Of course, this is completely optional, but as we had extra Strawberries, we figured: Why not? We just folded the diced strawberries into our batter & Voila…. You can see from the picture; it came out beautifully. But you’ll have to take our word for it: It was DELICIOUS!
A Topping……..
Now, you can eat this cake without any kind of topping. But if you do decide that it needs more, we’ve got a couple of suggestions:
A Syrup, a Glaze, or Frosting…….
This is how we did our syrup:
2 Cups Diced Strawberries
½ Cup Ashleigh Moscato
2 Cups confectioners’ sugar
Allow the Diced strawberries to steep in the Moscato on low heat for 30’ish minutes. We let it sit on simmer while we ate lunch…..
Then add in the 2 cups of confectioners’ sugar & whisk.
If you wish, add more confectioners’ sugar to thicken to a Glaze…..
We did make Ashleigh Moscato Frosting but you need to go to This Page for the Recipe because we used our Frosting Recipe when we made Ashleigh Moscato Cupcakes!!!!!
Some additional notes concerning this recipe:
You can use any flavor cake mix you wish. It’s all about YOU, after all….
You can also use any kind of oil. Canola is a perfect substitute. We just like Coconut best…
