You may be thinking “What’s Not to Like about Ice Cream?”…… Well, let me tell you…………………
First of all, some of us do NOT like our cereal to get soggy! So, let me explain.
These Homemade Ice Cream Balls were always made with Corn Flakes! As you know, ice cream tends to melt! Right?! So, when the melting happens, the flakes tend to get soggy…. Hence, NOT my favorite! But I solved the issue! #IceCreamTime
One more note: REAL Ice Cream is always BEST! But you choose …..
Our “TRADITIONAL” Homemade Ice Cream Ball Recipe:
- ¼ C Butter
- ½ C Brown Sugar
- ½ C Toasted Almonds
- 2 & ½ C Corn Flakes
- 1.5 Qt. Vanilla Ice Cream
In a medium to large saucepan (large enough to fit all 2 & ½ cups of Corn Flakes & Almonds), melt the Butter. Then, stir in the Brown Sugar…. Let it come to a boil & immediately remove it from heat. Stir in the Almonds. Then, let it cool a bit more before adding in the Corn Flakes. Toss this mixture Lightly to make sure each Corn Flake gets some Sugar………And…. Then, Spread on Wax paper to cool. If you use a cookie sheet, it makes clean-up way easier….
While the Corn Flake mixture is cooling, Roll Your Ice Cream into balls. If the ice cream starts to melt too quickly, go ahead & put the balls into the freezer to firm up….
Now that all the balls are formed & the Corn Flake mixture is cooled all you need to do is roll the balls in the Corn Flake mix! Then allow these Homemade Ice Cream Balls to Freeze & Firm up in your freezer……
That sounds easy, right? And also, pretty tasty? But…. How about an Even Better Homemade Ice Cream Ball Recipe??????
New & Improved Recipe:
- ½ Cup Butter
- 1 Cup Brown Sugar
- 3 Cups Almond Slices
- 1.5 Qt. Ice Cream
Now, we do things just a little bit different….
Prepare a Cookie Sheet with either Foil or Parchment Paper (whichever you prefer) Heat your Oven to 350°
Melt the Butter in a Medium to Large Saucepan. (The saucepan needs to be able to fit the 3 Cups of Almonds.) Add in the Brown Sugar once the Butter is melted. Then, bring it to a slow boil. Remove from Heat. Add in the Almonds. Coat those Almonds very generously…. Then spread the mixture on your prepared Cookie Sheet. Bake for 5-7 minutes. This crystallizes the sugar mixture REALLY coating those Almonds!!! YUM, right ????
While the Almonds are baking, go ahead & shape those ice cream balls. Again, if you need to, put them back in the freezer so they don’t melt into a blob….
Now, as you can imagine, that Almond Sugar Mixture needs to cool a bit. Then, it’s time to have some FUN! Roll your Homemade Ice Cream Ball in the Almond Sugar Mixture & Freeze!
*Note: We have a rather large Rubbermaid container that we use to store our Homemade Ice Cream Balls. We also use Waxed Paper to keep them from sticking together………
You could even use a different kind of nut if you don’t like Almonds… We prefer Toasted Almonds. But Thinly Sliced does work Wonderfully!
Family Tradition & a Homemade Ice Cream Ball
I really don’t know where this recipe originated from. But my Favorite Aunt in the Entire World was the First Person that created these in our Family! Of course, because they were SO Wonderful, many members of our family took this recipe & ran with it! My mom even shared it in our church cookbook back in the day. Of course, she did give my aunt credit!
Maybe these became SO Special in our Family because they were ONLY made once a YEAR!
Even as the family grew up, moved apart, & had their own families, we tried to get together as often as possible… And Guess what?! Many of those family members would “request” a Homemade Ice Cream Ball to be on the menu!
And this was the One Thing that my dad was “allowed” to help out with in the kitchen!!! Ok. There were a couple other things… Like any kind of carving …. He was allowed to Carve the Turkey or Roast. But Mom took her “ownership” of all things kitchen, cooking & baking extremely seriously!!! But then, as she got older, she didn’t like certain tasks because of her arthritis! So, the very first time she said “NO” to making Homemade Ice Cream Balls, it just about broke the family up!!! But it was ONLY because of her hands hurting!! Of course, it took hours & hours to get her to admit she just didn’t want to deal with her hands freezing!!! And then Dad came to the Rescue!!! And Marital Bliss reigned again!!! Dad was more than willing to freeze his hands off just so Mom could provide her Homemade Ice Cream Balls!!
And Our Traditions Live On…….
It’s been quite a few years that my Favorite Aunt & Dad have been gone. But I would Love for them to try My Version of Homemade Ice Cream Balls…..
