This is the Best Coconut Pudding Recipe EVER! And it’s also pretty easy to make. But if you are watching your calories or sugar intake, Don’t Worry! Because you’ll see a couple of substitutes listed that you can try……
But if you are allergic to coconut, you have my deepest sympathies!
Not only is coconut super yummy, BUT it also has quite a few healthy attributes!
Yes, Coconut meat is High in Fat. Furthermore, it is also very high in calories! And, I Heard that Groan! Yes, it also has Carbs! And protein content is somewhat lacking. So, you are probably wondering why I said it has healthy attributes?
It DOES! Coconut is very low in natural sugar (that is until you add in the sugar). When you count the Fiber, the equal amount of carbs can be subtracted! So, for 1 cup of coconut the NET Carbs are only 3 grams (10 Grams Carbs – 7 Grams Fiber) Pretty good, right?
In addition to all 3 Grams of Net Carbs, you get Tons of the minerals & nutrients your body needs in a day! Manganese, Selenium, Copper, Phosphorus, Potassium, Iron & Zinc can ALL be found in coconut meat!
But working together, these are some of the minerals we need to support enzyme function & fat metabolism. But don’t forget they also support bone formation & heart health.

So, back to the Fat content: Coconut is extremely High in Fat. But it is almost all saturated fat (89%). You’ve probably seen how popular MCT is, especially in keto dieting, right? Well, most of the fat in Coconut is Medium-Chain-Triglycerides. Those are MCTs. These fats are absorbed in your small intestine. Then your body uses them to produce ENERGY!!!! So, these Fats actually do Good & not Evil!
Before we get too far away from discussing the nutrient value of Coconut, let’s NOT forget that Fiber! Fiber is GOOD for us, right? Did you know there is a difference between soluble & insoluble fiber? Well, most of the fiber in coconut is insoluble! Consequently, it does NOT get digested! Sounds scary? Nope! It’s actually super helpful! Insoluble fiber actually works to move food through our digestive systems. This aids in better health for our nether regions (the bowel).
Lastly, coconuts contain polyphenol Antioxidants! These antioxidants Protect our Cells from oxidative damage! Our cells are damaged on a daily basis by almost everything around us, including chemicals & normal aging. So, bring on the Polyphenols! Do you know what else contains Polyphenols? Red Wine, that’s What!
Coconut Milk & Best Coconut Pudding Recipe
Be Careful to choose Coconut MILK when shopping for all your ingredients. You don’t want to confuse coconut milk with coconut water! That would be a Pudding Disaster!
Coconut Milk comes from Ripe or Mature coconuts. But first, you have to break through the Husk of a coconut. Then, you need to break the Shell. Once you’ve broken into the shell, you’ll come to the Water & Meat. Where’s the Milk? You ask……….
**As a special note: You CAN drink the water directly from a coconut shell. But the Best sweet tasting coconut water is going to come from Green coconut. Brown Coconuts’ water loses its sweetness as the coconut ages.
But we NEED Coconut Milk for this recipe! If you’ve got the time & want the adventure, go ahead & make YOUR Own Coconut Milk! You’ll need a Couple of Fresh Coconuts to start! If your local store doesn’t sell coconuts, you can even buy them online!
Once you crack open the shell, you’ll want to save the coconut water. Then scrape out all the meat! Put the coconut meat into your blender, cover with the coconut water & add in just enough water to cover the meat. Blend on high for about 3 minutes. And This is THE part I don’t like…. Now, you need to strain the mixture through a cheesecloth in order to get all that milk! And you have to Squeeze the meat as hard as you can so you don’t leave any milk behind….. See how it’s just easier to buy a carton or can of Thick Coconut Milk?
Ingredients needed for our Coconut Pudding Recipe:
- 1 Can (13.66 oz) Coconut Milk
- ½ Cup Sugar
- 3 Eggs
- 3 & ½ Tbs. Cornstarch
- 2 Teas Coconut Extract
- ½ Cup Coconut Chips, Flakes or Shred
You can substitute any granulated sugar alternative. Monk Fruit & Splenda both work well. You can also use Xanthan Gum or Arrowroot powder instead of Cornstarch. If you use Xanthan Gum, only use 1/8 Teas. Xanthan Gum thickens really quickly & you do NOT need much for the full effect. Arrowroot powder is a perfect substitute for Cornstarch & it can be substituted exactly as called for in any recipe containing Cornstarch.
Ready Set Go….
Grab a somewhat largish saucepan. Don’t turn on the stove YET. Add the coconut milk, sugar, eggs & cornstarch to your saucepan. Now, whisk until all ingredients are fully combined. When you are confident that everything is mixed, turn on the stove to a medium setting. Add in Coconut Extract & Coconut shreds, chips, or flakes! Now, hopefully, your muscles are up to this! Because you need to continuously or FREQUENTLY whisk while your pudding heats up. Don’t turn the heat up! Pudding scorches easily! And seriously, WHISK. If you don’t whisk enough or the heat is too high, your pudding may become a lumpy unappetizing dessert!
In about 8 – 14 minutes your pudding will thicken. Once you’ve achieved the desired thickness, remove from heat. Let it Cool Then Enjoy!
Adding a little Whipped Cream on top with a garnishment of toasted Coconut makes a beautiful picture!
You don’t have any Whipped Cream or Toasted Coconut?!
You can easily toast coconut in your oven! Either chips, shred, or flakes…. Put some in a cake pan & bake until golden brown….
Now if you need some Homemade Whipped Cream… How about adding some Coconut extract? Sounds Great! Right? #CoconutLover
Start with a very cold or Frozen mixing bowl. You can even put your beaters in the freezer too! This process really makes a difference in firm whipped cream!
You’ll Need:
- 1 Cup HEAVY Whipping Cream
- 2 Tbs Powdered Sugar
- ½ Teaspoon Extract – this is where we LOVE Coconut Extract….
- Also, a ¼ Teas of cream of tartar will help the Whip stay Thick!
Add all ingredients into your frozen mixing bowl & Whip at HIGH Speed. Keep going until Firm Peaks are visible. When that delicious whipped topping really sticks to your beaters, you’ll know it’s READY!
