This Mexican Seasoning Recipe will save you tons of time! It’s not every day that we are able to Dine Out!! So, we try to bring our preferred restaurants Home! Or at least I try to recreate some of my favorite dishes! Furthermore, when we are able to get out of the kitchen, sometimes we (I) have to Compromise! Rather than eat at My favorite restaurant every time, it’s important that I allow others to have a turn at choosing our destination!

So, as you may have guessed, when I’m cooking, Hispanic dishes are often on our menu! Consequently, I have probably “Americanized” my recipes. But I can only strive to improve & hope my cooking skills rival that of my favorite restaurant!

I do love playing around with recipes & creating a dish to our taste preferences. Similarly, it is very frustrating to run out of a particular spice or ingredient. Consequently, that is why I started pre-mixing these ingredients! Now, I have all of my necessary spices (in the appropriate measurements) on hand all the time! By the way, did you know that a chipotle pepper is actually a smoked & dried jalapeno pepper? So, if you have too many fresh jalapenos… Just smoke some & you are ready to crush your very own chipotle spice… One of my most favorite plants is my jalapeno peppers plant. Did you also know that the beautiful (pictured below) is what turns into the actual jalapeno pepper? So, don’t pluck those flowers! It is my humble opinion that my Chipotle Peppers is what makes this Mexican Seasoning Recipe SO Great! #MexicanFood

Fine Wine

Ingredients:

  • 2 Teas. Celery Salt
  • 1 Tbsp Chipotle Chili Powder
  • 1 Teas. Dried Cilantro
  • 1 Teas. Cumin
  • 1 &1/2 Teas. Garlic Powder
  • 1 Teas. Onion Powder
  • 1 Teas. Oregano
  • ½ Teas. Paprika
  •  ¼ Teas Pepper
  • ½ Teas. Red Pepper Flakes (if you don’t like spicy – cut back or leave out)

The fastest way to mix this Mexican Seasoning Recipe is to put all the ingredients directly into a “spice” jar. I LOVE these little jars! They are so handy! So, shake it up. Mix it up. And it’s ready to go!

Another of my favorite plants is Cilantro! Do you know the difference between Cilantro & Coriander? Both herbs actually taste very different but come from the very SAME plant. Cilantro comes from the leaves & stems of the Coriander plant. After the coriander plant flowers, it will then produce seeds. These seeds are called coriander seeds. Once you harvest your seeds, you can use them as a whole seed or crush them…. So, this ONE marvelous plant gives us 2 distinct flavors!

This combination of spices is so convenient to have on hand! The boys prefer Beef Enchiladas. But the girls would rather have Chicken Enchiladas! One way or the other, this mixture gets used a LOT! Grilled Stuffed Chicken Burritos with Pico De Gallo & Guacamole toppings is another of our family’s favorites! But I have to tattle on myself! There have been a couple of times that I’ve forgotten to include the Creamy Jalapeno sauce in our Grilled Stuffed Chicken Burritos! (You would think I had committed a mortal sin!!) But, as long as I’ve got all of the ingredients, this sauce goes just as well on top! #MexicanFood

Sometimes we’ll have Pastry Stuffed Jalapenos as a side too!

If I’ve planned ahead, my family gets a very special treat: Elephant Ears!

But sometimes I have to take the speedy way out – with “Fake” Elephant Ears but they are still super tasty!

After Dinner…..

Ok, now dinner is done! All the plates are scraped clean! (Sometimes I think there are certain members of the family that would LICK the plates clean if I let them!) We load that dishwasher & it’s Vegetate Time!

We usually have to vote on TV or Games, but no matter which wins, we get Paid!
