Cream Cheese French Toast Casserole

This Cream Cheese French Toast Casserole is Marvelous for Breakfast! But it also makes an excellent Dessert! It’s the perfect cross between French Toast & Bread Pudding! Furthermore, it is so easy to modify this recipe with your favorite fruits! 

We encourage you to share this with your family! But, by all means, change it to fit your tastes!

One wonderful time-saving tip: Prepare this casserole the night before, then bake it in the morning!

You can also easily double the recipe if you feel the need…….

Cream Cheese French Toast Casserole

Blueberry Cream Cheese French Toast Casserole:

Ingredients~

Casserole:

  • 6 Slices of Bread (We prefer Buttermilk but you can use whichever type you like)
  • 8 Oz Cubed Cream Cheese (small ½ in. squares & no need to soften!)
  • 3 Cups Blueberries (We like Fresh but Frozen works too)
  • 6 Eggs – Beaten
  • 1 Cup Milk (We prefer whole milk)
  • 1 Teas. Vanilla
  • 1/3 Cup Maple Syrup

Sauce:

  • 2 Cups Sugar
  • 1 to 2 Tbs. Cornstarch
  • 2 Cups Water
  • 1 Cup Blueberries

Preheat your oven to 400 Degrees. Butter (or non-stick spray) an 8×8 Baking Dish. If you decide to double the ingredients, a 13×9 Dish works well. #SweetBreakfast

Prep & Refrigerate!

Cube the bread into bite-size pieces. We have found if the cubes are too small, it seems like the casserole is just mushed together. But if they are too big, they don’t soak in the Yumminess!

Between a ½ to 1-inch cube seems to be just right! Dump the cubes into your baking dish & bake for about 12 – 18 minutes, stirring a couple of times so all of the cubes have equal “Air” time. You could also spread them on a baking sheet if you prefer. We want the bread to be dry & a bit crunchy. Getting a little brown is OK. But you don’t want them to burn and ruin your Cream Cheese French Toast Casserole….

Many Bread Pudding or Casserole recipes call for Day Old Bread because “Dried-out or stale” bread supposedly soaks up liquid better. We happen to like the consistency of “dried-out” bread better than fresh!

While the bread is baking, cube the cream cheese. Again, no need to soften the cream cheese. Then beat the eggs and stir in milk, vanilla, and maple syrup. Once your bread is ready, remove your dish from the oven. Remove ½ of the bread cubes from the dish. Then add the cubed Cream Cheese along with 2 Cups of Blueberries. (The remaining 1 cup of Blueberries will be for the Yummy sauce!) Then top with the remaining Bread Cubes.

Pour your milk mixture over the bread cubes. Stir just enough to allow the Blueberries to peek through. You also want every cube of bread to be wet. Sometimes you may need to squish the bread down a little bit.

At this point, we usually cover & put it in the refrigerator for tomorrow morning. That way we can sleep in just a tiny bit more…..

A Breakfast Surprise with Cream Cheese French Toast Casserole

Preheat Oven to 350 Degrees

If you use a glass baking dish & have refrigerated it overnight, it needs to warm to room temperature before putting it into a preheated oven!

Once your oven is preheated to 350 degrees, cover your casserole with foil & bake for 30 minutes. At the end of 30 minutes, uncover & bake for another 20 – 30 minutes. (Always keep an eye on your casserole. Our oven may run hotter than yours!)

During the last 30 minutes, we make the sauce!

If you like a sauce to be really thick, use 2 tablespoons of cornstarch. We like our sauce to be between thin & thick. You know: Just Right! So, we use 1 Tablespoon Plus 1 Teaspoon of Cornstarch. It’s always better to start with 1 tablespoon & add until you have reached your desired consistency.

So, combine the Water, Sugar, & Cornstarch in a medium saucepan and bring to a boil. Add the remaining 1 cup of Blueberries. We like to smush the blueberries with a masher for a smoother consistency. Fresh Blueberries won’t “liquefy” like frozen ones will, so we Smush! Plus, that makes the sauce really pretty & purple! But you can decide how you like your blueberry sauce …

Then we are ready to top this delectable Cream Cheese French Toast Casserole.

For safety’s sake, you really should let the casserole cool for a few minutes before dishing up. But that’s never worked at our house. It gets dished up immediately!

It’s also all up to you whether you top your serving of this scrumptious casserole with a little bit or a LOT of sauce. If you really want this casserole to present as a “dessert”, you can also add some whipped cream…

Another tip: any left-over sauce goes GREAT on top of ice cream!

We’ve tried, & Greatly Enjoyed, this recipe with Strawberries, Raspberries & Peaches. While we try to use Fresh Fruit whenever possible, frozen or canned also works. For our next family gathering, we are going to do a mixed berry, with Strawberries, Raspberries & Blueberries!!!
